Mixed Vegetable Soup with Roti
A chunky mixed-veg soup with everyday Indian seasoning, served with rotis for a light but complete dinner plate.
Soup alone can feel incomplete in an Indian diet plan; pairing it with roti makes a practical evening main that still centers vegetables.
Keep the vegetables chunky rather than pureed so the bowl eats like a meal. Onion and garlic build the base in the standard version.

Ingredients
- 11 cup Carrot, diced
- 21 cup Beans, chopped
- 31 cup Cabbage or Cauliflower, chopped
- 41/2 cup Peas
- 51 Onion, chopped
- 61 Tomato, chopped
- 71 tsp Ginger-garlic paste
- 81/2 tsp Cumin Seeds
- 91/2 tsp Turmeric
- 101/2 tsp Black Pepper
- 111 tbsp Oil
- 124 cups Water or light vegetable stock
- 13Salt to taste
- 14Lemon and coriander
- 154 Rotis for serving

Heat oil, crackle cumin, saute onion until soft. Add ginger-garlic and tomato; cook 2 minutes.
Cut vegetables to similar size so they cook evenly.

Add all vegetables, turmeric, salt, and pepper. Stir 1–2 minutes.
Avoid over-blending; texture is part of satiety.

Pour in water or stock. Bring to a boil, then simmer until vegetables are tender but not mushy, 12–15 minutes.
A leftover roti torn into the soup turns it into a quick one-bowl meal.

Adjust consistency: slightly brothy for a lighter dinner, thicker if you prefer stew-like texture.
Pepper and lemon matter more than heavy chilli for a clean finish.

Finish with lemon and coriander. Serve hot with rotis for dipping or on the side.
Salt near the end if your stock is already seasoned.
Vegetable mixes
- Monsoon: corn, cabbage, carrot, beans.
- Winter: cauliflower, peas, carrot, spinach.
- Add bottle gourd for a milder, lighter soup.
Plate adjustments
- Millet roti for a gluten-free variation.
- Stir in cooked moong dal for more protein.
- Skip onion and garlic and use hing for a no-onion/no-garlic variation (not the default).
