French Beans Foogath with Rice

South Indian-style French beans stir-cooked with coconut, mustard, and curry leaves—no onion or garlic—served with rice.

Foogath is a simple vegetable stir-fry that keeps beans bright and lightly coconut-sweet. With rice, it becomes a complete gluten-free, Jain-friendly main.

Use tender French beans. Fresh grated coconut is ideal; frozen grated coconut works when thawed.

Ingredients

  • 13 cups French Beans, finely chopped
  • 21/2 cup Fresh Grated Coconut
  • 31 cup Uncooked Rice (or 3 cups cooked)
  • 41/2 tsp Mustard Seeds
  • 51/2 tsp Urad Dal (optional)
  • 61/4 tsp Certified gluten-free Asafoetida (Hing)
  • 78–10 Curry Leaves
  • 81–2 Dried Red Chillies (optional)
  • 91/2 tsp Turmeric
  • 101 tbsp Oil
  • 11Salt to taste
  • 12Lemon wedges

Instructions

    Cook rice and keep warm.

    Chop beans small so they cook quickly and evenly.

    Heat oil. Add mustard seeds; when they pop, add optional urad dal, dried chilli, hing, and curry leaves.

    Keep some bite; overcooked foogath tastes dull.

    Add beans, turmeric, and salt. Stir well.

    Coconut goes in at the end so it stays fragrant.

    Cover and cook on low heat until beans are tender-crisp, 8–10 minutes, sprinkling a little water only if needed.

    Skip urad dal if you do not have it—the dish still works.

    Stir in grated coconut and cook 1–2 minutes uncovered. Serve over rice with lemon.

    A complete plate can add a small bowl of sambar or plain dal when extra protein is needed.

Vegetable swaps
  • Use cabbage or ivy gourd (tindora) with the same tempering.
  • Mix beans with peas for color and sweetness.
  • Cluster beans can replace French beans if you prefer a stronger flavor (different recipe experience).
Plate adjustments
  • Brown rice or millets instead of white rice.
  • Add steamed toor dal on the side for more protein.
  • Serve with cucumber slices or cut fruit for more produce.
