No-bake sweet bites of dates, peanuts, and seeds. Perfect travel fuel and dessert-level craving fix.
These are the plant-based answer to packaged energy bars: sticky dates bind nuts and seeds into bite-sized snacks that travel well without refrigeration for a day.
Use soft dates; if dry, soak 10 minutes in warm water and drain well before blending.

Ingredients
- 11 cup Soft Dates, pitted
- 21/2 cup Roasted Peanuts
- 32 tbsp Seeds (pumpkin, sunflower, or sesame)
- 41 tbsp Cocoa powder (optional)
- 51/4 tsp Cardamom powder
- 6Pinch of Salt
- 71–2 tsp Water only if needed to bind

Pulse peanuts and seeds in a mixer to a coarse meal—not a fine flour.
A sticky dough that holds when pressed is the goal.

Add dates, cocoa, cardamom, and salt. Blend to a sticky dough.
Oily peanut butter texture means you over-blended—pulse in shorter bursts.

If too dry, add water a few drops at a time.
For travel, wrap individually in parchment.

Roll into 10–12 small balls. Optional: roll in sesame or cocoa.
Refrigerate up to a week; freeze up to a month.

Chill 20 minutes to firm up, then store in a jar.
Cocoa makes them taste like chocolate truffles.
